Sticky Toffee Pudding

Ingredients

Pudding

  • 2 oz butter
  • 6 oz sugar
  • 1 egg
  • 8 oz flour, sifted
  • 1 tsp baking powder, sifted
  • 6 oz stoned dates, chopped
  • 1/2 pint boiling water
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla essence

Toffee Topping

  • 5 oz brown sugar
  • 4 tbsp cream
  • 3 oz butter

Method

Pudding

  1. Cream butter and sugar.
  2. Beat egg into mixture.
  3. Gradually add flour and baking powder.
  4. Cover dates with boiling water, bicarbonate of soda, and vanilla essence.
  5. Add to flour mixture and mix well to form a sloppy batter.
  6. Pour into greased dish, approximately 10" x 8". Bake for 40 mins at 190°C.

Topping

  1. Heat brown sugar, cream, and butter.
  2. Simmer for 3 minutes.
  3. Pour over baked pudding and place under hot grill until it bubbles.

Serve with whipped cream, custard, or ice cream.
