Ingredients
Ingredients list is a guide, veg can be added as desired.
Chicken stock cube can be used instead of making stock in step 1.
To make chicken stock
- Chicken carcas
- 1 onion, sliced
- Carrot
- Celery
- 2 tbsp vinegar
For the risotto
- Rice
- Onion, chopped
- Red pepper
- Mushrooms
- Baby sweetcorn
- Broccoli
- Cooked chicken
- 1 tbsp tomato ketchup
- Seasoning
Method
- Make chicken stock with bones, pieces of chicken skin, one onion
sliced, carrot, celery.
- Add 2 tbsp vinegar and cook rice (with 2 cm liquid above rice) until
all stock is absorbed. (Extra stock can be frozen.)
- Fry chopped onion, red pepper, mushrooms, baby sweetcorn, broccoli, etc
until soft.
- Add cooked chicken, 1 tbsp tomato ketchup, salt, pepper, mixed herbs to taste.
- Add rice and mix.
