Pumpkin Pie Bars

A good way to use up leftover pumpkin pie filling!

Oven: 190°C

Ingredients

For the crust and topping:

  • 115g unsalted butter
  • 1/2 cup light brown sugar
  • 1.5 cups plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves

For the filling:

  • 1.5 cups pumpkin pie mix (not pumpkin purée)
  • 1 large egg
  • 1/2 tsp vanilla extract

Method

  1. Line an 8-inch square pan with parchment paper. Set aside.
  2. Preheat oven to 190°C.
  3. Melt butter and let cool to room temperature.
  4. In a medium mixing bowl, whisk together flour, brown sugar, bicarbonate or soda, baking powder, cinnamon, cloves, and salt.
  5. Add melted butter and mix until crumbly dough forms.
  6. Reserve about 3/4 cup of the mixture for the topping.
  7. Press the remaining dough into prepared pan. Set aside.
  8. Place all filling ingredients in a large mixing bowl of a stand mixer and mix until all combined.
  9. Pour over crust.
  10. Sprinkle with the topping mixture.
  11. Bake for 30 minutes or until the topping is golden brown.
  12. Cool completely in pan. Cut into squares.
