Lemon Meringue Ice Dessert

Ingredients

Makes 2 loaf tins:

  • 450ml double cream
  • 400g carton Greek Yogurt
  • 6oz icing sugar
  • Finely grated rind of 3 lemons
  • 1 packet meringue nests, crushed
  • 6 tbsp lemon curd

Method

  1. Whip cream in large bowl.
  2. Add sugar, yogurt, + lemon rind.
  3. Whisk together.
  4. Add crushed meringues.
  5. Fold in lemon curd.
  6. Spoon into 2 loaf tins (lined).
  7. Cover + freeze.
