Cheat's Curry

Serves approx 4.

Ingredients

  • Chicken breast or other meat
  • Veg: Onion, peppers, etc.
  • 1 tbsp curry paste, eg. Korma paste, Thai Green Curry paste
  • Tin of coconut milk
  • Seasonings: salt, pepper, mixed herbs
  • Rice

Method

  1. Dice some chicken breast (or any other meat), and fry until lightly browned. Add diced vegetables as desired.
  2. Add a tablespoon of curry paste. Stir to coat.
  3. Add a tin of coconut milk, stir to mix in the coconut solids. Add seasonings to taste.
  4. Cook until sauce thickens, and serve with rice.
